Easy Chicken Chowder

Are you ever wondering what to make on one of those cold winter days? This chicken chowder is one of the heartiest meals you can make. This will warm your hands and your soul. You can easily make it in bulk and freeze the rest for days where you do not have the time to cook.

  1. Melt your butter.

    Turn on your stove on medium heat. In a medium sized pot, melt your butter.

  2. Add carrots and celery, season with salt and pepper.

    Add your carrots and celery and season with salt and pepper. Stir frequently for about 5 minutes, until the vegetables are tender.

  3. Add your garlic.

    Add the garlic and cook for about 30 more second, until fragrant. 

  4. Add flour.

    Add flour and stir very well until all the vegetables are coated.

  5. Add chicken breasts, potatoes, bay leaf and thyme.

    Place all the ingredients into the pan.

  6. Add the chicken broth.

    Add the chicken broth, make sure all ingredients are covered. Bring to a boil. Cook for about 15 minutes until the potatoes are tender and the chicken is no longer pink.

  7. Shred the chicken

    Take the chicken out and transfer it into a bowl. Shred the chicken with two forks.

  8. Take out the bay leaf, add chicken peas and corn.

    Return the shredded chicken to the bowl, take out the bay leaf and add your peas and corn.

  9. Your meal is ready to get served!

    (and it’s a great one for leftovers as well.. the broth will absorb all of those wonderful flavours!)
