Quick Chicken and Corn Chowder

Are you looking for an easy and satisfying dinner? Look no further. A cozy and rich soup made with chicken breast, hearty potatoes, delicious corn and a salty bacon finish that will keep you craving more!

Alternative ingredients

If you have any leftover vegetables you want to get rid of, this is the perfect soup for you! Personally for the vegetables I would not remove the carrot, celery or the potatoes, but other than that you can subtract and add any veggies you like. Delicious additions I would recommend are:

  • Broccoli florets
  • Baby spinach – add at the end
  • Peppers
  • Jalapeno if you want some spice

If you want to save time on your cooking, you can also use shredded rotisserie chicken instead of chicken breasts. Just make sure the potatoes are tender before you serve the delicious soup. You can check if they are ready by poking the potatoes with a fork. If it easily goes through, the soup is ready to be eaten. You can let it simmer away for a while for deeper flavours.
